Pasta from scratch? I can do that? YES YOU CAN.
It is so easy and so much fun to make. The pasta tastes so fresh and we recommend involving the whole family in the process. If you have a pasta maker, great, but if you don't just roll it out with a wine bottle or anything you can find in the house.

Ingredients
Ingredients:
1) cup (125g/250ml) all-purpose flour
2) large eggs
3)½ tsp salt
Optional to taste: parmesan, fresh thyme & origanum, olive oil, salt & pepper
Preparation
1.) Pour the flour onto a clean surface & make a small well in the middle. Add eggs + salt.
2.) Mix with a fork or fingers & slowly bring in flour from the sides until it starts forming a sticky dough. (If it’s too dry, add a spoon of water. Too wet, sprinkle a little more flour.)
3.) Knead for about 5–8 minutes until smooth and elastic. (If you press your finger in and it slowly bounces back, it’s ready.)
4.) Cover with a bowl and let it rest for 30 minutes at room temp. (This relaxes the gluten and makes rolling easier. You can skip this part if you are in a hurry, but if you have time, let it rest!)
5.) Dust your counter with flour. Use a wine bottle or rolling pin to roll it thin, about 1mm or as thin as you can without tearing.
6.) Dust with a bit more flour, roll the sheet loosely into a scroll, and slice into strips. Shake them out with your fingers, you just made tagliatelle!
7.) Boil in salted water for 2–3 minutes until tender. Fresh pasta cooks much faster than store-bought.
8.) Add a handful of freshly chopped herbs, parmesan & olive oil. Season with salt and pepper.
